2 tbsp olive oil
1 medium onion, chopped
2 garlic cloves, minced
1 medium potato, diced
4 cups vegetable broth
4 cups fresh spinach leaves
salt and black pepper to taste
1/4 tsp nutmeg (optional)
Method :
1.In a large saucepan, heat the olive oil over medium heat. Add the onion and cook until softened and transparent, about 5 minutes.
2.Add garlic and cook for an additional minute.
3.Add the potatoes and vegetable broth and bring to a boil. Reduce heat and let simmer until potatoes are tender, about 15 minutes.
