1 cup green lentils, washed and soaked in water for an hour

1 medium-sized potato, diced
1 medium-sized carrot, sliced

1 teaspoon cumin
1/2 teaspoon turmeric
Salt and black pepper to taste
2 tablespoons olive oil
Method :
1.In a large pot, heat the olive oil over medium heat.
2.Add the chopped onion and garlic, stirring until golden.
3.Add the soaked lentils and stir for a minute.
4.Add the potato and carrot, and mix them together.
5.Pour in the vegetable broth, cumin, turmeric, salt, and black pepper. Let it come to a boil.
6.Reduce the heat, cover the pot, and let it simmer for 20-25 minutes until the lentils and vegetables are tender.
7.Serve the soup hot, and you can garnish it with some yogurt or cream if desired.
8.Add a tablespoon of lemon juice when serving for a refreshing flavor.
9.Additional vegetables like celery or sweet potatoes can be added according to preference.
