1 can (about 400g) black beans
1 can (about 400g) corn
1 red pepper, cut into small cubes
1 green pepper, cut into small cubes
1 small red onion, chopped
1/4 cup chopped cilantro
1/4 cup fresh lemon juice
2 tbsp olive oil
1 teaspoon ground cumin
Method :
1.In a large bowl, mix the black beans, corn, red peppers, green peppers, and red onions.
2.In a small bowl, mix lemon juice, olive oil, cumin, salt, and black pepper.
3.Pour the marinade over the bean and vegetable mixture and mix well.
4.Add chopped cilantro and mix again.
5.Serve the salad cold and enjoy.
